With the current surge for summer evening drinks, sunset BBQ’s and weekends at the seaside, we thought we’d bring you a cuisine synonymous with the heatwave, celebration and parties. Our focus of this week’s blog is on the South American paradise, Brazil and some of its popular dishes.

 

Barbequed Meat

Both Brazil and Argentina say they are the very best at barbeques in South America, yet both have very different styles. The Brazilian BBQ cuisine is meat mainly seasoned with lots of salt before cooking on the grill and usually served pink. The huge quantities of meat are what makes these south American styles stand out from the rest of the world. At a Brazilian home, BBQ’s will include copious amounts of meat from sausages to chicken hearts. Whilst the BBQ style restaurants offer all sorts of meat cuts to whichever rarity you like.

Moqueca

Moqueca is a fish stew with finely chopped tomatoes, onions and coriander. However, both residents of Bahia, in the North-East, and those from the neighbouring state of Espírito Santo both lay claim to the origins of the dish. As a result, you can find two versions, one while extra palm oil, peppers and coconut milk for a rich meal. While the other version just adds a hint of red food colouring to keep it light.

Canapes

An ice-cold beer with pastéis makes the ideal barsnack. Crispy pastry filled with cheese or minced beef are the key to a Brazilian barbeque side dish.
